Creamy Tuna Pasta

Ingredients

  • 12 oz pasta
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 2 cans canned tuna
  • 1 cup heavy cream
  • 1 lemon
  • ¼ cup parsley
  • to taste salt
  • to taste black pepper

Instructions

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in drained canned tuna and cook for another 2-3 minutes, breaking it up with a fork.
  • Add heavy cream and stir to combine; let it simmer for about 5 minutes until slightly thickened.
  • Season the sauce with salt, black pepper, and a squeeze of lemon juice.
  • Once the pasta is cooked, reserve ½ cup of pasta cooking water and drain the rest.
  • Add the drained pasta to the skillet and toss to coat in the sauce; if the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
  • Mix in chopped parsley for freshness and serve hot.
