Ingredients

  • 12 ounces pasta
  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • to taste salt

Instructions

  • Bring a large pot of salted water to a boil.
  • Add the pasta of your choice (e.g., spaghetti, fusilli, or penne) to the boiling water and cook according to the package instructions until al dente.
  • While the pasta is cooking, prepare the pesto sauce. In a food processor, combine fresh basil leaves, garlic, pine nuts, Parmesan cheese, and a pinch of salt.
  • With the food processor running, slowly drizzle in olive oil until the mixture is smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.
  • Once the pasta is cooked, reserve a cup of pasta water and then drain the pasta.
  • Return the drained pasta to the pot over low heat, add the pesto sauce, and mix well. If the sauce is too thick, add reserved pasta water a little at a time until reaching the desired consistency.
  • Serve immediately, garnished with additional Parmesan cheese and a sprinkle of pine nuts if desired.
